True Icewine is made from grapes that freeze naturally on the vine. When pressed while frozen, the ice crystals remain behind, and only the highly concentrated juice—rich in sugar, acidity, and flavor—is extracted.

This process results in extremely low yields and significant risk. If the weather does not cooperate, an entire harvest can be lost.

In the glass, Icewine is intense yet balanced. Flavors of honey, dried apricot, tropical fruit, and citrus peel are common, but the bright acidity keeps the wine precise and refreshing rather than heavy.

Icewine is not meant for casual drinking. It is enjoyed slowly, often as a dessert wine, or as a quiet conclusion to a long evening. It is sweetness with discipline.
